Get Stuffed Avocado

This is a great side to go with a grill out, or just a nice piece of fresh salmon

Serves 6
Stuff:

How the heck do I do this?

  1. Preheat Oven to 400'F
  2. Halve Avocados and remove seed
  3. Carefully peel away the skin and trim the round base so the avocado can sit on a plate without rolling around - Place on a baking sheet.
  4. Place Tomatoes,Cheese,Basil, Oil in a mixing bowl. Add a good pinch of salt and 4-6 turns of cracked pepper. Squeeze the lemon juice on top. Toss together well.
  5. Spoon Filling into avocado halves. Top with shredded Italian Cheese.
  6. Just before you are ready to eat, Pop Stuffed Avocados in your oven for about 3 minutes. The cheese should be melted but the avocado must not be cooked or it will turn bitter.
  7. Remove from oven and Drizzle with Balsamic Syrup and more cracked pepper.

Place In a Saucepan and reduce by 2/3rds
