Get Stuffed Avocado

This is a great side to go with a grill out, or just a nice piece of fresh salmon
Serves 6
Stuff:
- 3 avocados
- 3 very ripe roma tomatoes, small dice
- 8oz fresh mozzarella, med dice
- 2 T Fresh Basil , thinly shredded
- 2 T Extra Virgin Olive Oil
- 1 lemon
- salt and cracked Pepper
- 1 tsp sugar
- 1/2 cup shredded Italian Cheese (provolone, fontina)
- Balsamic Syrup
How the heck do I do this?
- Preheat Oven to 400'F
- Halve Avocados and remove seed
- Carefully peel away the skin and trim the round base so the avocado can sit on a plate without rolling around - Place on a baking sheet.
- Place Tomatoes,Cheese,Basil, Oil in a mixing bowl. Add a good pinch of salt and 4-6 turns of cracked pepper. Squeeze the lemon juice on top. Toss together well.
- Spoon Filling into avocado halves. Top with shredded Italian Cheese.
- Just before you are ready to eat, Pop Stuffed Avocados in your oven for about 3 minutes. The cheese should be melted but the avocado must not be cooked or it will turn bitter.
- Remove from oven and Drizzle with Balsamic Syrup and more cracked pepper.
Balsamic Syrup
- 1 cup balsamic Vinegar
- 1/3 cup sugar
Place In a Saucepan and reduce by 2/3rds
